Giant Peppermint Cookies

I love whipping these up at the moment! Who doesn't love a cookie and who doesn't love candy canes! So why not mix them together. These are my favourite cheat cookies - cheat because it's a packet mix. Shhhhh don't tell anyone.

What you need:
Packet cookie mix
2 candy canes

Set your oven to 190 and then you can begin .....

Take your candy canes and pop them in a freezer bag or lunch bag (with a zip), grab a rolling pin and crush away.

Follow your cookie pack instructions and make some cookie dough, try not to eat any whilst doing this. The pack that we had said that it would make 8 cookies, however we had other ideas. And those included GIANT COOKIES! So we just split the dough into two and rolled into a ball.

Once covered in crushed candy canes, pop the cookie dough onto a baking tray (with grease proof paper and not tin foil) and then flatten the dough to make a cookie shape. Place the cookie dough in the oven for 10 - 12 minutes. Keep an eye on them after 10 minutes and make sure to take out before they have browned. They will continue cooking once removed from the oven and we want them to be soft and gooey.

When they are done take them out of the oven and leave for 15 minutes, This is a tough job, but try to resist the urge to gobble them all up then and there.

Once cooled, you can share with your friends, or not and just eat them all by yourself. However as they are giant cookies, this is quite a tough mission. Enjoy.
