Cupcake Disasters

So I told you guys that I would be sharing with you - my cooking disasters once a week. Turns out finding any time to cook has been an absolute mission. I decided that I would attempt to make red velvet cupcakes and I used this recipe here. It was all going really week (I tell a lie) and everything looked exactly as it should be (that may also be a lie) - It started off promising.

They didn't turn out red which was a bit disappointing, however once the icing was on they didn't taste too bad. I still can't work out where on earth I went wrong, but I will try again and again until i'm a cupcake pro.

Oh they still look beautiful my dear! For next time though if you cream the butter first and then add the sugar that will make them so much lighter and fluffier..also huge rule when baking: always sieve flour, baking powder etc otherwise they'll turn out far too heavy and won't rise!

I would mix things in one at a time?! And also melt the butter a little - it mixes in easier :)

I'm cupcake obsessed so no doubt I'd still eat them. The finished ones look cute! xx

you should try making them from the package and not from scratch. if you want though i have an excellent red velvet cupcake recipe from magnolia bakery in nyc!!

also , the secret is to fill it up almost to the top so the cupcakes look rich and fluffy

Haha, at least you persevered, my dear -- I have a tendency to throw things out when they aren't working right. However, once you put enough icing on something, no one can tell if it's good or not, I promise!

Good attempt, at least you perservered! Next time try softening the butter and creaming it with the sugar before you add the flour and other ingrediants. Should make the whole misture alot smoother!

The link for your recipe doesn't work.... But you need an electric mixer. & You probably need a better recipe. Always separate liquid from dry ingredients, and read the directions perfectly. Good luck! xx

How much red food coloring did you use. I use at least an entire bottle to get mine red. But hey, it's the taste that matters so I wouldn't even worry about it.

it looks to me like you didnt let the butter soften before you mixed it with the sugar. i always let it sit out for an hour or so..then mix the butter a bit before adding the sugar...i read somewhere that the creaming part of recipes is important for getting fluffy results...but as long as they tasted good thats all that matters :)

this happened to me the first time i tried velvet cupcakes.. hmm, what food coloring did you use? i found that using a paste type rather than a liquid one helped in the color of the finished product. :D

Keep on trying. :) Maybe next time you can start by creaming the butter with a whisk or electric hand mixer and then adding the sugar. :) I'm sure the cuppies still tasted delish!

Looks like everything just was not mixed well enough! But you do not know unless you try.

Like some of the other commenters have said, cream the butter (easiest with electric beaters) first, usually it will go a little lighter yellow. Add the sugar and keep beating. It should dissolve into the butter. Check the butter/sugar mixture between two fingers to see how well blended it is.

Then, add the eggs one at a time and make sure they are fully mixed in before you add the next one.

Do you have caster sugar in the UK? It is finer than standard sugar and should mix in more easily.

PS Try muffins, they work best if you do not mix them too much and there are recipes that do not require any creaming of butter!

Yea try muffins please :) I would sooner eat them than your cheese scones! As it seems to be my job to consume all the stuff you bake I think i should get to choose what you make.

keep trying! practice makes perfect! and good on you for cooking them from scratch - makes such a better cake.

my only advice is to follow the recipe EXACTLY. in baking it is so important (and I'm so not a recipe person). I found that I had to use a whole bottle of red food colouring (gross I know) to get the proper red colour.
