Red Pepper Pesto Coodles


I know the pictures aren't pretty, but half the time my baking/ cooking are complete and utter disasters. However this red pepper pesto coodles tasted so so so amazing that I had to share it with you. I've bought a new spiralizer - I had to upgrade as my previous one fell apart. I am now using this one as it looks like it can actually do the job. For this little dinner I used a whole courgette and spiralized it. It's still a novelty and I loves it.


Once it's all spiralized pop it to one side and grab all of your other ingredients. I've become slightly obsessed with this chicken stuff - I have no idea what it is - but it tastes sooooo good and adds a little bit of spice to the mix.


Then find any other ingredients that you've got hanging around in your fridge. I'm trying to be healthy at the moment so there was a load of veggies and some pre cooked chicken. 


Warm up the chicken first then throw everything else into the pan and once the chicken is all warmed up, add the spinach - if you've got some. Then throw in your coodles and mix it all up.


Add your sauce and you're all ready to go and eat your dinner. Seriously this was just so amazing, that I made it for lunch the next day. Topped with cheese, you literally wouldn't know that you were just eating a plate of vegetables.

Pitta Pizza


Awful pictures I know, but a few of you asked how I made this over on Instagram, so here you go.

You'll need:
Pitta Bread 
Pizza base sauce (pasta sauce aisle)
Grated Cheese
What ever toppings you want - mozzarella, prosciutto ham and caramelised onion chutney.

First up pop your oven on at 200 degrees.
Add pizza sauce to pitta bread, then arrange all toppings as you wish. I put the grated cheese on last and then added the chutney.
Put pitta bread on a baking tray and leave in the oven for 10 minutes. This should be enough, however leave it in longer if you don't think the cheese is melted enough. Et voila. Eat away. It's quick and easy to make, which is what I love about these. And they are less calorific and stodgy that other pizzas.

Eggs Wrapped In Bacon


Happy Sunday girls and Happy 1st Day of March - roll on Spring. I thought as the weather is horrid outside i'd show you yesterdays breakfast. This one was super quick and so easy to whip up, that i'd even go as far as saying that I could even make this every morning before work. It's that easy.

What you'll need: 
2 eggs
Bacon
Cheese


Pop the oven on at 200 degrees. Then wrap the bacon around the edges of the muffin tray. I couldn't find mine this morning so I used a cupcake tray, so the recipe looked like it went a bit further.


Mix the eggs and cheese together in a bowl until combined. Then pour the mixture into the cupcake tray. Make sure to not fill it all the way as the eggs rise/ get bigger/ expand, whatever the cooking term is. Add some more cheese to each one. Then put the tray into the oven and set the timer for 30 minutes.


Whilst the eggs are in the oven - go and get ready for the day - pop your make up on and do your hair. After 25 minuted have passed get your tomatoes and some coconut oil and cook them up. When the timer goes off you are all done.

I gobbled mine down with a lovely double chocolate mocha. It's my new addiction. I hope you give this ago - it's super yummy.

Peppermint Hot Chocolate

I like hot chocolate, any kind of chocolate in fact, but drinking chocolate is right up there with one of my fave things to do. Currently, to treat myself after a long day at work i've been making peppermint hot chocolate each night, topped with marshmallows. So naughty, but so so good.

All that's needed is
Milk - we suggest full fat
Hot drinking chocolate - currently loving Hasslacher's - found in Tesco
Marshmallows
Crushed candy canes
How to
Take 4/5 chocolate discs and melt, add milk and warm up together whilst stirring. Add some crushed candy canes 1/2 per cup, stir. Et voila - it is ready to be poured and then all marshmallowed up. When you get bored of candy canes and marshmallows you can always swap those up for your fave chocolate. I've tested out ferrero rocher and reeses pieces, both were pretty amazing.

Home MadeTurkey Burgers

Monday marked the first day of my new healthy eating lifestyle, Tuesday night marked the end - thank you Maria and Dominos pizza, however I was back on it Wednesday morning. I don't need to loose weight but I eat like a teenager, which needs to stop. One of my fave meals to whip up is home made turkey burgers with salad and sweet potato wedges. Super easy to do and they don't take long at all. First things first you need to cut up some red onion and garlic and lightly cook in a pan with oil. Pour some oats add the Turkey mince and mix it all up.
 I also add a bit of Reggae Reggae sauce at this point. Add as much as you like. Then divide into sections and lay the mixture flat into a burger shape and cook evenly on each side until cooked through. I find 5 mins on each side does well for me, but it depends on how big your burgers are. Whilst all this is being done your sweet potato wedges should be in the oven cooking. To make them you can check this recipe out here, although they are pretty straight forward. Serve with a massive salad and you have one yummy filling meal. I served it with an avocado and a slice of cheese.

Camembert Dreams

This is what cheese dreams are made of - I saw this on The Londoners blog the other week and I was starving at the time, so I had to make it. However my main reason for showing you this post is THE DOUGH. I had no idea Bake it fresh croissant dough existed, but even better the tin it's kept in, just unravels itself, hence the picture explosion - it kept me amused for quite sometime. Back to the cheese - it was amazing, I ate it all, i'm not ashamed. I did however swap the apples for chilli heat wave doritos, which was way better. Check out the How To here and give it a go.

Bagel Pizzas

Friday evening to me means wine and lovely meal, this Friday I am wiped so I needed something quick and simple, yet satisfying. I'm always looking for new things to try in the kitchen, and when I came across these bagel pizzas, I knew I had to give them a go. This recipe gave me the idea and I adapted it slightly with another recipe I found on Cath in the City. The result = absolute pizza amazingness. Dominos pizza eat your heat out.

Winter Salad

Winter isn't usually the time i'd choose to eat a cold meal, but after over indulging during the festive season, I really just want something easy and light. My obsession with sweet potatoes right now is crazy so when I saw this simple bacon and sweet potato salad I knew I had to make it. I changed the dressing to Mayo as I hate Mustard and added spinach as I didn't think there was enough greens. I also baked the sweet potato instead of grilling - mainly due to the fact that I haven't worked out how to use my grill. The flavour was amazing - I love mixing bacon with all sorts of food and the saltiness really gives it a punch.

How to Create the Perfect Cheeseboard: According to Me

I'm am no expert on cheeseboard assembly, I just have a mild obsession with cheese - any cheese, but here is what makes a perfect cheeseboard.

  • Grapes - people seem to be a but 50/50 on the grape aspect - but I can't think of anything better that cheese and grapes - delicious
  • Chutney (onion, Tom spice) Is an absolute must - I'm obsessed with the tomato spice, but if you get a chance do try the onion - it is surprisingly amazing.
  • Cranberry sauce - just a must have
  • Bread - the crustier the better if you ask me.
  • Cheese - obvs.
  • Crackers - lots and lots of crackers - the best tasting crackers - i love crackers.
  • Wine - I'm not fussed about which type - any type will do - I don't know what that says about me really? alcoholic anyone?
